Today, we’d like to share an update on the Jerusalem Artichokes growing at our farm in Minamioguni, Kumamoto Prefecture.
Jerusalem Artichokes are incredibly resilient plants. They grow strong and healthy without the need for any pesticides or chemical fertilizers. Back in June, the plants were still short, creating a lush, green carpet across the entire field. This was a crucial time for each plant to firmly establish its roots.

And just like that, with the arrival of August and the strong summer sun, the Jerusalem Artichokes have grown an incredible amount!
As you can see in the photos, the plants are now as tall as a person, with dense, leafy foliage. It’s as if they’re happily reaching out, soaking up the rich, natural environment of Minamioguni.
The large stems and leaves that grow during this time are a vital source of energy for the tubers underground. Soon, as the weather cools, they’ll sprout beautiful yellow flowers, signaling that the harvest season is just around the corner.
